Green Sauce

Another Casa Ole favorite.
Casa Ole Green Sauce
4 Avocados
1 (16 oz.) Container Sour Cream
1 can Rotel tomatoes
1 Tbsp. Garlic Powder
1 (4 oz.) Can Green Chili Peppers
2 tsp. Salt
1 tsp. Lemon juice
3 oz. Cream Cheese
Mix and blend all ingredients until smooth.

Chili Con Queso

This recipe is from Casa Ole, a popular Houston restaurant.
5 lbs American Cheese
26oz water
13oz chopped onions
9oz chopped celery
10oz chopped bell pepper
1 3/4 oz finely chopped jalapeno
Add water & cheese to double boiler. Bring to a boil, stirring every 5 min. Place onions, bell peppers, celery, jalapeno peppers in a sauce pan w 2 oz water. Cook on med. Stirring constantly until veg. come to a light boil. When cheese has completely melted add veg. and mix thoroughly. Cook 5 min.
Don’t weigh the ingredients. I use a liquid measuring cup and measure them. This is mild, if you like spicy stuff, add more jalepeno.
**This is very thick. Thin it with water (Casa Ole adds lots of water to theirs). If you let it cool and then reheat you will need to add water.
**Do not cook in crock pot. It turns very dark and does not taste right.

*** Family memories - a waitress at our local restaurant use to ask "would you like chili a queso?"  We knew it was coming, and would not look at each other, as we knew we would crack up!

Fall

I love Fall. There are so many ways to decorate. I purchase fall decor at the end of the season for 80-90% off, and have scads of things to use.
Our church fellowship hall is decorated for fall now. Every table has a different fall colored cloth, and every centerpiece is different. I will be posting pictures of the tables soon.
For a fun centerpiece, use a pumpkin (real or fake). Cut the top out. If using a real pumpkin clean out seeds. Insert styrofoam inside. Use real flowers for a live pumpkin or silk flowers for a fake pumpkin and create an arrangement.
Menu:
Serve sandwiches cut with leaf shaped cookie cutters.
Spiced cider, caramel or pumpkin spiced coffee,
Pumpkin rolls, pumpkin cupcakes, or pumpkin bread (add a small amount of cinnamon and/or pumpkin to butter to make flavored butter).
